Avocado Salsa Shrimp Dish (Print-Friendly Version)

01 - 1 lb cooked shrimp, peeled, deveined and tail off
02 - 0.5 cup cucumber, diced
03 - 0.5 cup tomatoes, chopped
04 - 1 small jalapeno, deseeded and finely chopped
05 - 0.25 cup red onion, diced
06 - 2 tbsp cilantro, chopped
07 - 0.5 cup plus 2 tbsp chunky salsa (mild, medium, or hot)
08 - 1 large avocado, diced
09 - 2 limes, juiced (or more if preferred)
10 - Salt and black pepper, to taste

# How to Prepare:

01 - Pat shrimp dry with a paper towel and cut into bite-sized pieces. Add to a large bowl and set aside. If using frozen pre-cooked shrimp, thaw completely before cutting and adding to the bowl.
02 - Add cucumber, jalapeno, tomatoes, red onion, and cilantro to the bowl with the shrimp. Pour salsa and lime juice over the top and mix until the salad is completely coated. Season generously with salt and black pepper. Mix again, adjusting seasonings and lime juice to taste.
03 - Sprinkle diced avocado over the top just before serving. Serve immediately with tortilla chips, or chill the salad in the refrigerator for 30 minutes to 1 hour before serving. If chilling the salad, wait to add avocado until just before serving.
