Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large bowl, mash the ripe bananas with a fork until smooth. Overripe bananas with brown spots are ideal for maximum sweetness and moisture.

Add the rolled oats, blueberries, honey or maple syrup, vanilla extract, cinnamon, and a pinch of salt to the mashed bananas. Stir until all ingredients are well combined and evenly distributed.

Drop spoonfuls of the dough onto the prepared baking sheet, leaving space between each cookie. Flatten each cookie slightly with the back of a spoon to shape them. Bake for about 15-17 minutes, or until the edges are golden brown and the tops are set.

Let the cookies cool on the baking sheet for a few minutes. Transfer to a wire rack to cool completely. Enjoy warm or at room temperature.
