# What You’ll Need to Make This:

→ Flatbread base and toppings

01 - 2 boneless, skinless chicken breasts (approximately 450 grams)
02 - 120 millilitres BBQ sauce
03 - 2 flatbreads (store-bought or homemade)
04 - 100 grams shredded mozzarella cheese
05 - 0.5 red onion, thinly sliced
06 - 170 grams corn kernels (fresh or frozen)
07 - 1 tablespoon olive oil (plus more for brushing flatbread)
08 - Fresh cilantro, chopped, for garnish (optional)

# How to Prepare:

01 - Heat 1 tablespoon olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper. Cook for 6 to 7 minutes per side, until internal temperature reaches 74°C and meat is fully cooked. Remove from heat and shred or chop into bite-sized pieces.
02 - Preheat oven to 190°C. Place flatbreads on a baking sheet and brush each with a thin layer of olive oil for enhanced crispiness.
03 - Spread BBQ sauce evenly on each flatbread. Distribute the shredded chicken, sliced red onion, and corn uniformly. Sprinkle with shredded mozzarella cheese.
04 - Bake flatbreads in the preheated oven for 10 to 12 minutes, until cheese is melted and bubbly and flatbread edges are golden and crisp.
05 - Remove from oven, garnish with fresh cilantro if desired, and serve hot.

# Extra Tips:

01 - Additional toppings such as sliced bell peppers, avocado, or jalapeños can be added as desired.
02 - Assembling in advance and refrigerating allows quick baking at mealtime.
03 - For optimal texture, reheat leftovers in a preheated oven at 175°C.
