BBQ Chicken Mozzarella Pizza (Print-Friendly Version)

# What You’ll Need to Make This:

01 - 1 batch pizza dough, rolled to 30 cm diameter
02 - 240 ml barbecue sauce

03 - 120 g mozzarella cheese, shredded
04 - 2 chicken thighs, boneless and skinless
05 - 1 tablespoon olive oil
06 - 0.25 teaspoon salt
07 - 0.25 teaspoon black pepper
08 - 30 g red or white onion, thinly sliced
09 - 1 tablespoon unsalted butter
10 - 1 tablespoon red wine vinegar
11 - 1 tablespoon fresh cilantro, chopped (optional, for garnish)

# How to Prepare:

01 - Set oven temperature to 200°C. Prepare a baking tray or pizza pan with parchment paper.
02 - Season chicken thighs with salt and pepper. In a sauté pan over medium heat, add olive oil, then cook the chicken for 5 minutes per side with the lid on until fully cooked.
03 - Transfer cooked chicken to a bowl. Shred using two forks and toss with approximately 30 ml barbecue sauce.
04 - In the same pan, add sliced onions, red wine vinegar, and butter. Cook over low heat for 5–10 minutes until onions are softened and caramelized.
05 - Roll out pizza dough to a 30 cm round or two 15 cm rounds. Place on prepared tray.
06 - Spread remaining barbecue sauce evenly over dough. Top with shredded mozzarella, BBQ chicken, and caramelized onions. Sprinkle with chopped cilantro, if using.
07 - Bake in preheated oven for about 13 minutes, or until crust is golden and cheese is melted and bubbling.
08 - Remove pizza from oven, slice, and serve immediately.
