Set oven temperature to 200°C. Prepare a baking tray or pizza pan with parchment paper.

Season chicken thighs with salt and pepper. In a sauté pan over medium heat, add olive oil, then cook the chicken for 5 minutes per side with the lid on until fully cooked.

Transfer cooked chicken to a bowl. Shred using two forks and toss with approximately 30 ml barbecue sauce.

In the same pan, add sliced onions, red wine vinegar, and butter. Cook over low heat for 5–10 minutes until onions are softened and caramelized.

Roll out pizza dough to a 30 cm round or two 15 cm rounds. Place on prepared tray.

Spread remaining barbecue sauce evenly over dough. Top with shredded mozzarella, BBQ chicken, and caramelized onions. Sprinkle with chopped cilantro, if using.

Bake in preheated oven for about 13 minutes, or until crust is golden and cheese is melted and bubbling.

Remove pizza from oven, slice, and serve immediately.
