01 - 1.5 lbs boneless, skinless chicken breasts
02 - 1/4 cup olive oil
03 - Juice of 2 lemons
04 - Zest of 1 lemon
05 - 3 cloves garlic, minced
06 - 1 tsp dried oregano
07 - 1 tsp dried thyme
08 - 1 tsp salt
09 - 1/2 tsp black pepper

10 - Fresh parsley, chopped
11 - 1-2 lemons, sliced (for grilling)

# How to Prepare:

01 - In a medium bowl, combine olive oil, lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, salt, and black pepper. Whisk everything together until well combined.
02 - Place chicken breasts in a large zip-lock bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag tightly or cover the dish with plastic wrap.
03 - Refrigerate and allow the chicken to marinate for at least 2 hours, preferably overnight for maximum flavor absorption.
04 - When ready to cook, preheat your grill to medium-high heat (around 190-205°C).
05 - Remove the chicken from the marinade and discard the remaining liquid. Place the chicken breasts on the preheated grill.
06 - Grill for approximately 6-8 minutes per side, until the chicken reaches an internal temperature of 75°C and has nice grill marks.
07 - During the last few minutes of cooking, place lemon slices on the grill to caramelize.
08 - Remove the chicken from the grill and allow it to rest for 5 minutes before slicing. This helps retain the juices.
09 - Garnish with fresh chopped parsley and serve with the grilled lemon slices.
