In a medium bowl, combine olive oil, lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, salt, and black pepper. Whisk everything together until well combined.

Place chicken breasts in a large zip-lock bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag tightly or cover the dish with plastic wrap.

Refrigerate and allow the chicken to marinate for at least 2 hours, preferably overnight for maximum flavor absorption.

When ready to cook, preheat your grill to medium-high heat (around 190-205°C).

Remove the chicken from the marinade and discard the remaining liquid. Place the chicken breasts on the preheated grill.

Grill for approximately 6-8 minutes per side, until the chicken reaches an internal temperature of 75°C and has nice grill marks.

During the last few minutes of cooking, place lemon slices on the grill to caramelize.
