Cajun Garlic Butter Steak Bites (Print-Friendly Version)

Juicy steak bites with Cajun spice, seared in a skillet and finished in a rich garlic butter glaze.

# What You’ll Need to Make This:

→ Cajun seasoning blend

01 - 1 tablespoon smoked paprika
02 - 1.5 teaspoons kosher salt
03 - 1.5 teaspoons garlic powder
04 - 1 teaspoon onion powder
05 - 0.5 teaspoon black pepper
06 - 0.5 teaspoon dried oregano
07 - 0.5 teaspoon cayenne pepper, or less to taste
08 - 0.5 teaspoon packed light brown sugar
09 - 0.25 teaspoon dried thyme

→ Steak and sauce

10 - 680 grams steak (such as strip steak, sirloin, or ribeye)
11 - 2 tablespoons vegetable oil, divided
12 - 3 tablespoons unsalted butter
13 - 5 cloves garlic, finely minced or grated
14 - Minced fresh parsley, for garnish

# How to Prepare:

01 - Cut steak into approximately 5 cm pieces and place in a mixing bowl.
02 - In a small bowl, combine smoked paprika, kosher salt, garlic powder, onion powder, black pepper, dried oregano, cayenne pepper, brown sugar, and dried thyme. Add the seasoning blend to the steak pieces and toss thoroughly to coat.
03 - Heat a large heavy-bottomed skillet over medium-high heat for several minutes until very hot and wisps of smoke are visible.
04 - Add 1 tablespoon of vegetable oil and swirl to coat the pan. Add half of the steak bites, making sure not to overcrowd. Sear for 2 minutes without moving, then flip and sear for another 2 minutes until well browned. Remove steak to a plate and repeat with remaining oil and steak.
05 - Reduce heat to medium-low. Add unsalted butter to the same skillet without cleaning. Once melted, add minced garlic and cook for about 30 seconds, scraping up browned bits with a wooden spoon.
06 - Turn off the heat. Return the seared steak bites to the skillet and toss to fully coat in the garlic butter.
07 - Garnish with freshly minced parsley and serve immediately while hot.

01 - For smaller portions, cut steak into 2.5 cm pieces and reduce cooking time slightly.
02 - Adjust cayenne pepper for desired spice level.
03 - Do not overcrowd the pan during searing to ensure even browning.
