While pierogies are boiling, heat olive oil in a large skillet over medium-high heat. Add sliced chicken sausages and sauté for 2 to 3 minutes until browned and crisp on the edges.

Stir the sliced onion into the skillet and cook for an additional 2 to 3 minutes, allowing onions to soften slightly.

Using a slotted spoon, transfer cooked pierogies directly to the skillet with the sausage and onions. Arrange in a single layer with one side of each pierogi touching the skillet surface.

Distribute butter in small pieces around the skillet. Continue cooking for 4 to 5 minutes, tossing occasionally, until pierogies are golden in spots.

Garnish with fresh parsley if desired and serve warm.
