# What You’ll Need to Make This:

→ Main Ingredients

01 - 340 g smoked sausage, Andouille or kielbasa, sliced into thin rounds
02 - 225 g pasta, penne or rigatoni
03 - 1 tablespoon (15 ml) olive oil
04 - 1 cup (150 g) mixed bell peppers, diced
05 - 120 ml heavy cream
06 - 1 cup (240 ml) chicken broth
07 - 60 g onion, diced
08 - 80 g Parmesan cheese, shredded
09 - 2 tablespoons (14 g) Cajun seasoning

→ Seasonings and Garnishes

10 - 0.5 teaspoon garlic powder
11 - 0.25 teaspoon cayenne pepper, optional
12 - 1 cup (30 g) fresh spinach, optional
13 - Salt and black pepper, to taste
14 - Chopped fresh parsley, for garnish

# How to Prepare:

01 - Slice the smoked sausage into thin rounds. Dice the bell peppers and onion. Measure out Cajun seasoning, heavy cream, Parmesan cheese, and optional spinach.
02 - Heat olive oil in a large skillet or pot over medium-high heat. Add the sliced sausage and sauté until browned, approximately 3–4 minutes. Remove the sausage and set aside.
03 - In the same pot, add diced bell peppers and onion. Sauté for 3 minutes until vegetables begin to soften.
04 - Stir in Cajun seasoning, garlic powder, and cayenne pepper if using. Mix well to coat the vegetables.
05 - Pour in chicken broth and bring the mixture to a gentle simmer.
06 - Add pasta directly to the pot, stirring to combine. Cook uncovered, stirring occasionally, for 10–12 minutes or until pasta is al dente and liquid is mostly absorbed.
07 - Reduce heat to low and pour in heavy cream and shredded Parmesan. Stir until cheese melts and the sauce is smooth and creamy.
08 - Stir the cooked sausage and spinach (if using) into the pasta until evenly incorporated. Season with salt and pepper to taste.
09 - Spoon the pasta into bowls. Garnish with chopped fresh parsley and additional Parmesan cheese or red pepper flakes if desired.

# Extra Tips:

01 - For a spicier dish, increase the amount of cayenne pepper based on preference.
02 - Substitute smoked turkey sausage for a lighter option.
