6-Ingredient Easy Vegan Key Lime (Print-Friendly Version)

# What You’ll Need to Make This:

→ Crust

01 - 250 g Biscoff cookies
02 - 56 g salted vegan butter, melted

→ Filling

03 - 420 g (2 cans, each 210 g) vegan sweetened condensed milk
04 - 120 ml vegan heavy cream
05 - 70 g cornstarch or arrowroot starch
06 - 120 ml freshly squeezed or store-bought key lime juice
07 - 1 tbsp key lime zest

→ Decoration

08 - vegan whipped cream, for topping

# How to Prepare:

01 - Preheat oven to 190°C. Grease a 25 cm pie dish (deep-dish if using 23 cm) and prepare all ingredients.
02 - In a food processor, pulse Biscoff cookies to a fine crumb. Add melted vegan butter and blend until mixture resembles wet sand.
03 - Firmly press the crumb mixture into the base and sides of the prepared pie dish, using a flat-bottomed glass or measuring cup. Bake for 10 minutes. Remove from oven and reduce heat to 175°C.
04 - In a large bowl, add vegan sweetened condensed milk. If solid coconut oil is present, microwave for 10–20 seconds to melt, then whisk until smooth. Add vegan heavy cream, cornstarch or arrowroot starch, key lime juice, and lime zest. Whisk until fully combined and no lumps remain.
05 - Pour the filling into the par-baked crust. Bake at 175°C for 15–18 minutes until the filling appears set but still jiggles slightly.
06 - Allow pie to cool at room temperature until just warm. Transfer to refrigerator to chill for 4–6 hours, preferably overnight, until fully set.
07 - Transfer pie briefly to freezer for 10 minutes to firm slightly. Meanwhile, prepare vegan whipped cream. Pipe or spread whipped cream over the chilled pie, slice, and serve.

01 - For gluten free, substitute vegan gluten-free spiced cookies or gluten-free graham crackers for the crust.
02 - Both cornstarch and arrowroot starch are suitable thickeners for the filling.
03 - Sweetened condensed oat or coconut milk may be used; microwave before using if separation occurs.
