01 - 60 ml ghee or unsalted butter, divided
02 - 15 ml extra-virgin olive oil
03 - 450 g Yukon Gold potatoes, cut into 1.25 cm cubes
04 - 3 garlic cloves, finely minced
05 - 1 teaspoon dried thyme
06 - 0.5 teaspoon dried oregano
07 - 0.5 teaspoon fine sea salt, plus more as needed
08 - 0.25 teaspoon freshly ground black pepper, plus additional to taste
09 - 565 g sirloin steak, cut into 1.25 cm cubes

10 - Fresh parsley, chopped (to taste)

# How to Prepare:

01 - Set a large cast iron skillet over medium heat. Add the olive oil and half of the ghee, allowing the ghee to melt completely.
02 - Add the cubed potatoes to the pan. Sprinkle the minced garlic, thyme, oregano, 0.5 teaspoon sea salt, and 0.25 teaspoon black pepper evenly over the potatoes. Sauté undisturbed for 2-3 minutes. Stir the potatoes and continue cooking, stirring every 1-2 minutes, until golden brown and fork-tender, approximately 8-10 minutes.
03 - Transfer the sautéed potatoes and any browned bits from the pan to a plate and set aside.
04 - Raise heat to medium-high. Add the remaining ghee to the pan and allow it to melt. Add the sirloin steak cubes and season with a pinch of salt and pepper. Sear for at least 2 minutes without stirring to develop a crust. Stir and cook for 1-2 more minutes until golden brown.
05 - Return the potatoes to the pan with the steak. Stir to combine evenly. Taste and adjust seasoning with additional salt and pepper if desired. Top with freshly chopped parsley before serving.
