Preheat oven to 175°C. Lightly grease a 23×23 cm baking dish and set aside.

In a large mixing bowl, combine flour, granulated sugar, brown sugar, rolled oats, baking powder, salt, and ground cinnamon.

Add softened butter and vanilla extract to the dry mixture. Blend until the mixture forms coarse crumbs.

Reserve about 1 cup of the crumb mixture. Evenly press the remaining mixture into the bottom of the prepared dish.

In a separate bowl, gently toss diced peaches with a small amount of sugar for added sweetness if desired and incorporate vanilla extract.

Distribute the peaches evenly over the crust base.

Sprinkle the reserved crumb mixture evenly on top of the peaches to create a rustic topping.

Bake for 30–35 minutes, or until the top turns golden brown and the filling is bubbling.

Allow bars to cool in the baking dish for at least 10 minutes before slicing into squares. Serve warm or at room temperature.
