Cut chicken into bite-sized cubes and season evenly with salt and pepper.

Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and sear until each piece is golden brown, about 5 to 7 minutes. Transfer chicken to a plate and set aside.

In the same pan, add chopped onion. Sauté for 2 to 3 minutes until translucent. Add minced garlic and cook for an additional minute, stirring frequently.

Stir uncooked rice into the onion mixture, allowing it to toast for approximately 1 minute to develop flavor.

Pour in chicken broth, stirring well and scraping any browned bits from the bottom of the pan.

Return browned chicken to the skillet. Add BBQ sauce and mix thoroughly to coat all ingredients.

Lower the heat to a gentle simmer. Cover and cook for 18 to 20 minutes, or until the rice is fully tender and most of the liquid is absorbed.

Turn off the heat. Gently fluff rice, cover again, and let stand for 5 minutes before serving. Drizzle with additional BBQ sauce if desired.
