Chopped Honey Buffalo Chicken Skewer (Print-Friendly Version)

# What You’ll Need to Make This:

→ For the Salad

01 - 160 ml buffalo sauce or hot sauce
02 - 60 ml honey
03 - 2 tablespoons extra virgin olive oil
04 - 900 g chicken breasts, cut into 2 cm cubes
05 - 1 tablespoon seasoned salt
06 - 6 g freshly ground black pepper
07 - 420 g shredded lettuce
08 - 20 g fresh cilantro, finely chopped
09 - 150 g cherry tomatoes, sliced
10 - 165 g grilled corn kernels (from 2 ears of corn)
11 - 40 g peperoncini, chopped
12 - 120 g blue cheese, crumbled or cheddar, cubed
13 - 6 slices cooked bacon, crumbled
14 - 1 ripe avocado, diced

→ For the Creamy Herb Dressing

15 - 120 g sour cream or plain Greek yogurt
16 - 75 g mayonnaise
17 - 85 g pickled jalapeños
18 - 10 g fresh cilantro, coarsely chopped
19 - 8 g fresh basil, chopped
20 - 6 g fresh dill, chopped
21 - 1 teaspoon garlic powder
22 - Kosher salt, to taste
23 - Freshly ground black pepper, to taste

# How to Prepare:

01 - In a medium bowl, combine buffalo sauce and honey, stirring until fully incorporated.
02 - In a separate large bowl, toss chicken cubes with olive oil, seasoned salt, and a few grinds of black pepper. Pour in 60 ml of the prepared honey buffalo sauce and turn to evenly coat the chicken. Thread the coated chicken pieces onto skewers.
03 - Preheat grill, grill pan, or skillet over medium-high heat. Place prepared chicken skewers on the grill and cook, turning occasionally, until evenly charred and cooked through, approximately 10 to 12 minutes.
04 - While the chicken grills, add sour cream or Greek yogurt, mayonnaise, pickled jalapeños, fresh cilantro, basil, dill, garlic powder, a pinch of kosher salt, and black pepper to a blender. Blend until smooth and creamy, then taste and adjust seasoning as needed.
05 - In a large serving bowl, gently toss shredded lettuce, chopped cilantro, sliced cherry tomatoes, grilled corn kernels, and chopped peperoncini with half of the herb dressing.
06 - Top the salad with the grilled chicken skewers, crumbled blue cheese or cubed cheddar, crumbled bacon, and diced avocado. Serve alongside remaining dressing and extra honey buffalo sauce.
