Preheat oven to 220°C. Line a half sheet pan with parchment paper.

Spread diced sweet potatoes on the prepared sheet pan. Lightly coat with cooking spray, season with salt, black pepper, and ground cinnamon. Bake for 30 minutes, flipping and re-seasoning halfway through for even cooking.

While potatoes roast, heat a frying pan over medium-high heat. Add ground beef and cook, breaking it into small pieces, until fully browned, about 5 minutes. Drain excess liquid.

Add tomato paste and taco seasoning to the cooked beef. Stir in a splash of water and cook for 1-2 minutes until well combined. Remove from heat.

Divide roasted sweet potatoes, taco beef, cottage cheese, and sliced avocados evenly among four bowls. Drizzle each with hot honey just before serving.
