# What You’ll Need to Make This:

01 - 680 g sweet potatoes, peeled and diced into 0.5 cm cubes

05 - Cooking spray, for coating sweet potatoes

06 - 453 g 93/7 lean ground beef

07 - 16 g tomato paste
08 - 1 tablespoon taco seasoning

09 - 452 g 2% fat cottage cheese

10 - 400 g small avocados (4 total), peeled and sliced
11 - 42 g hot honey

# How to Prepare:

01 - Preheat oven to 220°C. Line a half sheet pan with parchment paper.
02 - Spread diced sweet potatoes on the prepared sheet pan. Lightly coat with cooking spray, season with salt, black pepper, and ground cinnamon. Bake for 30 minutes, flipping and re-seasoning halfway through for even cooking.
03 - While potatoes roast, heat a frying pan over medium-high heat. Add ground beef and cook, breaking it into small pieces, until fully browned, about 5 minutes. Drain excess liquid.
04 - Add tomato paste and taco seasoning to the cooked beef. Stir in a splash of water and cook for 1-2 minutes until well combined. Remove from heat.
05 - Divide roasted sweet potatoes, taco beef, cottage cheese, and sliced avocados evenly among four bowls. Drizzle each with hot honey just before serving.
