Rinse the rice under cold running water using a bowl or fine mesh strainer for about 1 minute, until the water is clear.

Melt the butter in a medium-sized pot over medium heat. Add the rinsed rice and salt, stirring occasionally for 3 minutes, until the grains are slightly toasted.

Pour in the water along with the lemon zest and lemon juice. Bring to a boil, then reduce heat to low, cover the pot, and simmer for 15 minutes.

Remove the pot from heat and let the rice rest, still covered, for 5 to 10 minutes to allow the grains to fully absorb the liquid.

If using, sprinkle turmeric over the rice and gently fluff with a fork. Garnish with chopped parsley before serving.
