01 - 4 large eggs, room temperature
02 - 360 ml whole milk, lukewarm (about 52°C)
03 - 3/4 teaspoon salt
04 - 190 g all-purpose flour, spooned and leveled
05 - 45 ml melted butter, cooled slightly

# How to Prepare:

01 - Combine eggs, lukewarm milk, and salt in a blender. Blend briefly to combine.
02 - Add all-purpose flour to the blender and blend until the batter is smooth.
03 - Pour in the melted butter and blend once more until mixture appears frothy. Let batter rest for 15 minutes.
04 - Preheat oven to 232°C. Position one rack in the lower third and another at the top of your oven. Place a 6-cup popover pan on a baking sheet and heat for 2 minutes on the lower rack.
05 - Remove the heated popover pan and coat wells and rim thoroughly with nonstick cooking spray. Divide batter evenly among the cups, filling nearly to the top.
06 - Bake at 232°C for 20 minutes without opening the oven door.
07 - Reduce oven temperature to 177°C without opening the door and bake an additional 10 minutes, until popovers are tall and deep golden brown.
08 - Remove popovers from oven. Pierce the tops with a paring knife to release steam, then remove from the pan, split open, and serve warm with butter.
