Combine chopped peaches, sugar, and 475 ml water in a medium saucepan. Bring to a boil over medium-high heat, stirring frequently.

Reduce heat and simmer for 5–10 minutes, until the peaches become soft and mushy.

Remove saucepan from heat and allow mixture to cool to room temperature for 30 minutes. Strain through a fine-mesh sieve, reserving the liquid.

Juice lemons to yield 80 ml and reserve lemon zest if desired for garnish or future use.

In a large pitcher, combine the peach syrup (approximately 240 ml), lemon juice, and 710 ml of chosen water or water-alcohol blend. Stir to combine.

Taste and adjust sweetness, citrus, or dilution as desired. Serve over ice in individual glasses. Garnish with peach or lemon slices and fresh mint if desired.
