Pour the remaining barbecue sauce over the chicken and pineapples. Cover the dish with plastic wrap and refrigerate for 30 minutes, or up to 2 hours, to allow flavors to meld.

Preheat oven to 200°C. Remove dish from refrigerator and discard plastic wrap. Drizzle olive oil evenly over the chicken.
