Combine granulated sugar, apple cider vinegar, red pepper flakes, and ground ginger in a medium saucepan. Stir thoroughly and bring to a gentle boil over medium heat.

Add diced pineapple to the simmering syrup. Lower the heat and gently simmer for 10 minutes, stirring occasionally to prevent sticking.
