Thoroughly wash and peel the carrots. Continue peeling to form long, thin carrot ribbons.

Place carrot ribbons in a large mixing bowl. Add sesame oil or extra virgin olive oil, rice wine vinegar, soy sauce, honey, and lime juice. Toss well to coat evenly.

Scatter sesame seeds and chopped green onions over the salad. Serve immediately, or refrigerate for 30 minutes to intensify flavors.
