# How to Prepare:

01 - Rinse and scrub the Yukon Gold potatoes thoroughly under cold running water to remove any surface dirt.
02 - Cut the potatoes into thin strips approximately 6 mm in width using a sharp knife.
03 - Place the sliced potatoes in a large bowl and cover completely with ice water. Soak for 30 minutes to remove excess starch.
04 - Drain the soaked potatoes and pat them dry thoroughly with a clean kitchen towel.
05 - Transfer potatoes to a clean bowl. Add olive oil and kosher salt, tossing to ensure even coating of each strip.
06 - Arrange the potato strips in a single layer in a lightly greased air fryer basket, ensuring they do not overlap. Cook in batches if needed.
07 - Air fry at 193°C for 18–20 minutes, turning the fries once halfway through cooking to ensure uniform crispness.
08 - In a small bowl, combine the finely grated parmesan cheese, garlic powder, and dried parsley until well mixed.
09 - Once the fries are golden and crisp, remove immediately from the air fryer. Toss them thoroughly with the prepared parmesan, garlic, and parsley mixture, and serve hot.
