Set your air fryer to 400°F (200°C) and let it preheat for a few minutes.

Pound the chicken to an even thickness if needed for even cooking. In one shallow bowl, whisk together the egg and water. In another bowl, mix Parmesan cheese, panko breadcrumbs, garlic powder, Italian seasoning, paprika, salt, and pepper.

Dip each chicken piece into the egg mixture, then coat it with the Parmesan-panko mixture, pressing lightly to adhere.

Lightly spray the air fryer basket with cooking spray. Place the chicken pieces in a single layer (cook in batches if necessary). Spray the tops lightly with cooking spray or brush with olive oil. Air fry for 10-12 minutes, flipping halfway through, until golden brown and the internal temperature reaches 165°F (75°C).

Let the chicken rest for a couple of minutes before serving. Serve with a side salad, vegetables, or your favorite dipping sauce.
