Score the top of the brie in a crosshatch pattern. Spread fig preserves evenly over the cheese, drizzle with honey, sprinkle with fresh thyme leaves, and season with black pepper. Optionally, add chopped walnuts or pecans.

Fold the puff pastry up and over the brie, ensuring all edges are sealed securely.

Brush the entire pastry with beaten egg and sprinkle with coarse sugar if desired.
