Basic Cauliflower Fritters (Print Version)

# Ingredients:

→ Fritters

01 - 1 small head of cauliflower (about 3 cups, finely chopped)
02 - 2 large eggs
03 - 1/2 cup all-purpose flour (or almond flour for gluten-free)
04 - 1/2 cup shredded cheese (cheddar or Parmesan)
05 - 2 green onions, finely chopped
06 - 1 clove garlic, minced
07 - 1/2 tsp salt
08 - 1/4 tsp black pepper
09 - 1/2 tsp paprika (optional)

→ Cooking oil

10 - 2 tbsp olive oil (for frying)

# Instructions:

01 - Steam or microwave cauliflower until tender (about 5 minutes). Let it cool, then finely chop or mash it with a fork.
02 - In a bowl, whisk the eggs. Add flour, cheese, green onions, garlic, salt, pepper, and paprika. Stir in the mashed cauliflower and mix until well combined.
03 - Heat olive oil in a skillet over medium heat. Scoop about 2 tablespoons of batter for each fritter, flatten slightly, and cook for 3-4 minutes per side, until golden brown and crispy.
04 - Drain the fritters on paper towels and serve warm with sour cream, yogurt, or your favorite dipping sauce.

01 - Make it low-carb by using almond flour instead of all-purpose flour.
02 - Add extra vegetables like grated zucchini or carrots for added nutrition.
03 - Store leftovers in the fridge for up to 3 days or freeze for up to 3 months. Reheat in a pan or oven for crispiness.
