Heat olive oil in a large skillet over medium heat. Cook onions until soft, about 2 minutes. Add garlic and cook until fragrant, about 30 seconds. Add shredded chicken, paprika, Worcestershire sauce, and BBQ sauce. Stir to combine and cook until heated through, about 2-3 minutes.

In a medium bowl, mix melted butter with garlic and minced parsley. Microwave until fully melted.

Lay 12 slices of bread on a work surface. Spread garlic butter mixture on one side of each slice. On the unbuttered side of 6 slices, layer 1 slice of Havarti cheese, an even amount of the BBQ chicken mixture, and another slice of Havarti cheese. Top with the remaining slices of bread, buttered side out.

In a large non-stick skillet over medium heat, cook sandwiches until the bottom is golden brown, 3-5 minutes. Flip the sandwiches, reduce heat to medium-low, and continue cooking until the bottom is browned and the cheese is melted, another 3-5 minutes.
