Pat pork chops dry with paper towel. Season both sides with salt and freshly ground black pepper, then evenly rub the spice mixture over each chop.

Heat olive oil in a large skillet over medium-high heat until shimmering.

Place the pork chops in the hot skillet and cook for 4–5 minutes per side, until a caramelised crust forms and internal temperature reaches 63°C.
