# Instructions:

01 - Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté for 5-7 minutes until softened. Stir in minced garlic and cook for another 1-2 minutes.
02 - Add chopped cabbage, turmeric, cumin, paprika, and black pepper. Stir well to coat evenly.
03 - Pour in vegetable broth and diced tomatoes (with juices). Mix, bring to a simmer, and reduce heat to low. Cover and cook for 25-30 minutes until cabbage is tender.
04 - Adjust salt to taste. Add lemon juice for brightness if desired. Serve warm, garnished with fresh parsley.
