Preheat the oven to 200°C.

Slice the chicken breast into four pieces and pound each to 1.5 cm thickness.

In a small bowl, combine sea salt, black pepper, dried oregano, and paprika. Season both sides of the chicken breasts with the spice mixture.

Place the seasoned chicken pieces in an 28 x 18 cm baking dish.

In a measuring jug, whisk together heavy cream, cornstarch, minced garlic, and green chilies until the mixture is smooth.

Pour the cream and chili mixture evenly over the chicken. Bake uncovered for 25 to 30 minutes.

Remove the dish from the oven, scatter chopped spinach and shredded cheddar cheese over the chicken, and return to the oven.

Bake for a further 10 minutes or until the cheese is fully melted and bubbling.

Serve with pasta or rice as desired. Garnish with chopped Italian parsley and crushed red pepper if preferred.
