01 - 450 g chicken breast, sliced into four pieces
02 - 1 teaspoon sea salt, or to taste
03 - 0.5 teaspoon freshly ground black pepper, or to taste
04 - 0.75 teaspoon paprika
05 - 1 teaspoon dried oregano
06 - 240 ml heavy cream
07 - 1 tablespoon cornstarch
08 - 3 garlic cloves, minced
09 - 115 g canned mild green chilies, drained
10 - 225 g shredded cheddar cheese
11 - 1 cup fresh spinach, chopped

# How to Prepare:

01 - Preheat the oven to 200°C.
02 - Slice the chicken breast into four pieces and pound each to 1.5 cm thickness.
03 - In a small bowl, combine sea salt, black pepper, dried oregano, and paprika. Season both sides of the chicken breasts with the spice mixture.
04 - Place the seasoned chicken pieces in an 28 x 18 cm baking dish.
05 - In a measuring jug, whisk together heavy cream, cornstarch, minced garlic, and green chilies until the mixture is smooth.
06 - Pour the cream and chili mixture evenly over the chicken. Bake uncovered for 25 to 30 minutes.
07 - Remove the dish from the oven, scatter chopped spinach and shredded cheddar cheese over the chicken, and return to the oven.
08 - Bake for a further 10 minutes or until the cheese is fully melted and bubbling.
09 - Serve with pasta or rice as desired. Garnish with chopped Italian parsley and crushed red pepper if preferred.

01 - If a golden cheese crust is desired, broil for 2 additional minutes after baking to finish.
