01 - 2 boneless, skinless chicken breasts (approximately 450 grams), diced
02 - 1 cup (240 millilitres) marinara sauce
03 - 1 cup (100 grams) shredded mozzarella cheese
04 - 1/2 cup (50 grams) grated Parmesan cheese
05 - 1 teaspoon Italian seasoning
06 - Salt to taste
07 - Freshly ground black pepper to taste

→ Pastry and Assembly

08 - 1 sheet puff pastry (thawed, approximately 250 grams)
09 - 2 tablespoons (30 millilitres) olive oil, divided

# How to Prepare:

01 - Preheat oven to 200°C and line a baking sheet with parchment paper.
02 - Heat 1 tablespoon olive oil in a skillet over medium heat. Sauté diced chicken until golden brown and cooked through, about 6–8 minutes.
03 - Stir in marinara sauce and Italian seasoning with the chicken. Simmer for 5 minutes, then remove from heat and mix in mozzarella and Parmesan cheese until thoroughly combined.
04 - Roll out puff pastry on a floured surface and cut into 10 × 10 cm squares.
05 - Place a generous spoonful of chicken mixture onto the centre of each pastry square. Fold corners over the filling and press edges with a fork to seal.
06 - Transfer pillows to the prepared baking sheet. Brush tops with remaining olive oil and bake for 15–20 minutes, or until pastry is golden brown.
