Submerge sweet potato fries in a bowl of cold water for 30 minutes to eliminate excess starch.

In a large bowl, toss fries with olive oil, garlic powder, paprika, salt, and black pepper. Add cornstarch at this stage if using and toss until evenly coated.

Carefully remove the hot baking sheet from oven. Arrange fries in a single, non-overlapping layer to ensure crispness.
