While chicken cooks, heat avocado oil in a saucepan over medium heat. Sauté minced garlic and the white parts of the green onion until fragrant. Stir in gochujang, honey, ketchup, mirin, and sesame oil. Cook, stirring, until the sauce thickens slightly. Mix in toasted sesame seeds and the green onion tops.
