# What You’ll Need to Make This:

→ Fries

01 - 800–900 g frozen French fries
02 - 6 g brown sugar
03 - 0.5 g garlic powder
04 - 0.5 g onion powder
05 - 0.5 g chili powder
06 - 0.5 g paprika
07 - 0.5 g salt
08 - 0.5 g ground black pepper
09 - 60 ml ranch dressing, plus extra for serving

→ Cheese Sauce

10 - 28 g unsalted butter
11 - 16 g plain flour
12 - 160 ml whole milk
13 - 170 g medium cheddar cheese, freshly shredded

# How to Prepare:

01 - Set oven to the temperature indicated on the frozen fries packaging. Line two baking trays with aluminium foil and spray with non-stick cooking spray.
02 - In a small bowl, mix together brown sugar, garlic powder, onion powder, chili powder, paprika, salt, and black pepper.
03 - Distribute frozen fries evenly on the prepared baking trays. Sprinkle with seasoning blend, reserving approximately 2 g of the mixture for garnish.
04 - Toss fries to ensure even seasoning. Bake according to package instructions, rotating trays halfway, until fries are golden and crisp.
05 - Meanwhile, melt butter in a medium saucepan over medium-low heat.
06 - Whisk in flour and cook for 1 to 2 minutes, whisking constantly to form a smooth roux.
07 - Gradually pour in milk while whisking, continuing until the mixture is smooth and combined.
08 - Simmer to thicken, then gradually add shredded cheddar cheese. Stir continuously until fully melted and the sauce is smooth.
09 - Reduce heat to low and keep sauce warm. Add an extra splash of milk if it thickens excessively.
10 - Arrange one quarter of the fries on a plate. Spoon approximately 60 ml cheese sauce over the fries.
11 - Drizzle 15 ml ranch dressing over the fries and sprinkle with a small amount of reserved seasoning.
12 - Repeat plating, cheese saucing, and ranch drizzling process for remaining portions.
13 - Serve promptly with extra ranch dressing, cheese sauce, or ketchup for dipping as desired.

# Extra Tips:

01 - Hand-cut or homestyle fries deliver superior texture and hold their shape best.
02 - Always shred cheese freshly to ensure a velvety, lump-free sauce.
03 - Select medium cheddar for optimal flavor and melt; avoid sharp varieties for a smoother sauce.
04 - Use cheese sauce sparingly on each serving to maintain fry crispness.
05 - Louisiana Voodoo Fries are best enjoyed straight from the oven; reheating or freezing is not recommended.
