# What You’ll Need to Make This:

→ Vegetables and Legumes

01 - 2 cans (400 g each) chickpeas, liquid (aquafaba) reserved
02 - ½ white or yellow onion, finely diced
03 - 2 large garlic cloves, finely diced
04 - 4 oz (120 g) cherry or grape tomatoes, chopped
05 - ⅓ cup jarred sun-dried tomatoes, chopped
06 - 2 cups (60 g) spinach, chopped

→ Dairy and Alternative

07 - ½ cup grated parmesan cheese or vegan parmesan
08 - 1 cup canned coconut milk

→ Oils

09 - 1 tablespoon extra virgin olive oil
10 - 1 tablespoon oil from sun-dried tomato jar

→ Seasonings

11 - 1 tablespoon concentrated tomato paste
12 - 1 teaspoon dried oregano
13 - Salt, to taste
14 - Black pepper, to taste

→ Herbs

15 - Handful of fresh basil leaves

# How to Prepare:

01 - Finely dice onion, garlic, and spinach. Chop grape tomatoes and sun-dried tomatoes into small pieces.
02 - In a large pan, heat extra virgin olive oil over medium heat. Add diced onion and sauté until translucent.
03 - Add garlic, tomato paste, and oil from the sun-dried tomato jar. Sauté for a few minutes until fragrant.
04 - Incorporate chopped sun-dried tomatoes and grape tomatoes. Sauté until tomatoes have slightly softened.
05 - Add chickpeas along with 1 cup reserved aquafaba. Pour in coconut milk, add dried oregano, season with salt and black pepper. Stir well and simmer with a lid on over low-medium heat for 10 minutes.
06 - Add chopped spinach and grated parmesan cheese. Stir to combine. Cover for 2 minutes until spinach wilts and cheese melts, creating a creamy sauce. If too thick, adjust consistency with additional aquafaba, water, or coconut milk as needed.
07 - Serve topped with fresh basil leaves. Enjoy alongside basmati rice, crusty bread, or pita.

# Extra Tips:

01 - Use aquafaba from the canned chickpeas instead of broth for enhanced flavor and creamy consistency.
02 - The oil from the sun-dried tomato jar imparts savory depth; do not omit for best results.
03 - Add red pepper flakes if a mild, spicy note is desired.
04 - Incorporate spinach or kale at the end of cooking to maintain vibrant color and freshness.
