In a large bowl, mix together the mashed potatoes, shredded cheddar cheese, breadcrumbs, egg, garlic powder, onion powder, and parsley. Season generously with salt and black pepper to taste.

With clean hands or a spoon, form tablespoon-sized portions of the mixture and roll into compact balls. Place on a tray or plate.

For added crunch, roll each formed ball lightly in additional breadcrumbs or panko before frying.

Heat a few tablespoons of olive oil in a large frying pan over medium heat. When the oil is hot, fry the balls in batches for 2–3 minutes per side, turning gently, until evenly golden and crisp.

Transfer cooked puffs to a paper towel-lined plate to drain excess oil. Serve hot, accompanied by your choice of dipping sauce or as a savoury snack.
