01 - 4 large potatoes, washed and diced into small cubes
02 - 2 tablespoons olive oil

05 - 1/2 teaspoon ground cumin
06 - Salt and freshly ground black pepper to taste

07 - 1 cup shredded cheese (cheddar or Mexican blend)

# How to Prepare:

01 - Preheat the oven to 200°C and line a baking sheet with parchment paper or aluminium foil.

03 - Spread the seasoned potatoes in a single layer on the prepared baking sheet. Bake in the preheated oven for 25 to 30 minutes, stirring once halfway through, until golden brown and crispy.
04 - Remove the baking sheet from the oven and sprinkle shredded cheese evenly over the roasted potatoes. Return to the oven and bake for an additional 3 to 5 minutes, or until the cheese melts and is bubbly.
05 - Transfer the cheesy potatoes to a serving platter. Top with diced chicken, crumbled bacon, sliced green onions, a dollop of sour cream, and chopped fresh cilantro.
