02 - 4 medium potatoes, peeled and cut into 2 cm pieces
03 - 1 cup (150 grams) asparagus, trimmed and cut into 2.5 cm segments
04 - 1 small yellow onion, diced
05 - 2 garlic cloves, minced
06 - 1 cup (115 grams) cheddar cheese, shredded

07 - 240 ml chicken or vegetable broth
08 - 2 tablespoons (30 ml) olive oil
09 - 1 teaspoon dried thyme
10 - Salt, to taste
11 - Black pepper, to taste
12 - Fresh parsley, chopped, for garnish (optional)

# How to Prepare:

01 - Preheat oven to 190°C. Lightly grease a 33x23 cm baking dish with olive oil or cooking spray.
02 - Heat a large skillet over medium heat. Cook sausage slices until browned on both sides. Remove from skillet and set aside.
03 - In the same skillet, add potatoes and cook for 10 minutes, stirring occasionally, until beginning to soften. Add more olive oil if needed.
04 - Stir in diced onion and minced garlic. Cook 3–5 minutes until onion is translucent.
05 - Transfer potatoes, onions, and garlic to the prepared baking dish. Add browned sausage and asparagus, mixing gently to combine.
06 - Pour broth evenly over the mixture. Sprinkle dried thyme, salt, and black pepper across the dish.
07 - Cover dish tightly with aluminium foil. Bake for 20 minutes.
08 - Remove foil. Sprinkle shredded cheddar cheese over casserole. Return to oven and bake uncovered for 15 minutes until cheese is melted and golden.
09 - Allow casserole to rest for several minutes before serving. Garnish with chopped fresh parsley if desired. Serve warm.

# Extra Tips:

01 - Swap sausage for plant-based alternatives to make this dish vegetarian-friendly.
02 - Alternate spring vegetables such as carrots or spinach may be used in place of asparagus.
03 - For added creaminess, a spoonful of sour cream or splash of heavy cream can be incorporated before baking.
04 - Leftovers reheat well and are suitable for breakfast.
05 - Cooking is about enjoying time together—don’t seek perfection, but focus on hospitality.
