Generously season the beef chuck roast with salt and black pepper on all sides.

Place the seasoned beef in the base of a slow cooker, then add the diced onion, minced garlic, sliced carrots, and chopped celery around the meat.

Pour in the beef broth and red wine, if using. Sprinkle the dried thyme evenly over all ingredients.

Secure the lid and cook on low for 8 hours or on high for 4–5 hours, until the beef is fully tender and easily shreds with a fork.

Remove the beef from the slow cooker and, using two forks, shred the meat into bite-sized pieces. Serve the beef alongside the vegetables and spoon some cooking liquid over the top.
