Preheat grill to medium-high and lightly oil the grates, or heat a large skillet with a drizzle of oil over medium heat. Cook patties for 5–6 minutes per side until golden and cooked through, reaching an internal temperature of 75°C. If using cheese, place a slice atop each patty in the last minute, covering to melt.

In a small bowl, whisk mayonnaise with finely chopped chipotle pepper, lime juice, garlic powder, and a pinch of salt. Adjust seasoning to taste.

Generously spread chipotle mayo on the base of each toasted bun. Layer with lettuce, a chicken patty, sliced tomato, red onion, and pickled jalapeños if desired. Top with the remaining bun halve and press gently.
