Place chicken thighs in a large mixing bowl. Sprinkle taco seasoning and drizzle olive oil over the chicken. Toss thoroughly until evenly coated. Cover the bowl and refrigerate for at least 1 hour and up to 48 hours to marinate. If short on time, proceed directly to grilling.

Preheat the grill to high heat for approximately 20 minutes, aiming for a temperature around 275°C. Clean the grates thoroughly. Recover the grill and allow it to come back to temperature before grilling.

Place the marinated chicken thighs on the hot grates. Cover and grill for 4 to 5 minutes on the first side. Uncover the grill, flip the chicken, and grill for an additional 4 to 5 minutes or until the chicken is fully cooked through.

Transfer the grilled chicken to a serving platter and let rest for at least 5 minutes before slicing or serving. Taste and season with flaky sea salt if needed, bearing in mind the salt content of your taco seasoning.
