# Ingredients:

→ For the Cookies

01 - 1 3/4 cups all-purpose flour
02 - 1/2 teaspoon baking powder
03 - 1/4 teaspoon salt
04 - 1/2 cup unsalted butter, softened
05 - 3/4 cup granulated sugar
06 - 1 large egg
07 - 1 teaspoon vanilla extract
08 - 1 teaspoon instant espresso powder, dissolved in 1 tablespoon hot water

→ For the Mascarpone Filling

09 - 4 oz mascarpone cheese, softened
10 - 1/2 cup powdered sugar
11 - 1/2 teaspoon vanilla extract
12 - 1/2 teaspoon instant espresso powder, optional, for extra coffee flavor
13 - 1/4 cup heavy whipping cream

→ For Garnish

14 - Cocoa powder, for dusting
15 - Chocolate shavings, optional

# Instructions:

01 - Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. In a bowl, whisk together flour, baking powder, and salt. In a large bowl, beat butter and sugar until light and fluffy, about 2 minutes. Mix in the egg, vanilla extract, and dissolved espresso. Gradually add the dry ingredients, mixing until just combined. Drop 1-inch spoonfuls of dough onto the baking sheet, spacing them 2 inches apart. Bake for 8-10 minutes or until the edges are set. Let the cookies cool completely before filling.
02 - In a bowl, beat the mascarpone cheese, powdered sugar, vanilla extract, and espresso powder until smooth. In a separate bowl, whip the heavy whipping cream until soft peaks form. Gently fold the whipped cream into the mascarpone mixture until light and fluffy.
03 - Spread or pipe a generous amount of mascarpone filling onto the bottom of one cookie. Top with another cookie and press gently to create a sandwich. Lightly dust the tops with cocoa powder and optionally sprinkle with chocolate shavings. Refrigerate for 30 minutes before serving for the best texture.

# Notes:

01 - Want a boozy twist? Add 1 teaspoon of Kahlúa or rum to the mascarpone filling.
02 - For extra softness, store cookies in an airtight container overnight—the filling will slightly soften them, just like tiramisu!
03 - Storage: Keep refrigerated for up to 3 days.
