# Ingredients:

→ For the Chicken

01 - 1 pound boneless, skinless chicken breast or thighs, cut into bite-sized pieces
02 - 1 tablespoon soy sauce
03 - 1/2 teaspoon salt
04 - 1/2 teaspoon black pepper
05 - 1 teaspoon garlic powder
06 - 1 teaspoon smoked paprika
07 - 1 tablespoon cornstarch

→ For the Tropical Sauce

09 - 1 cup pineapple chunks, fresh or canned, drained
10 - 1/2 cup pineapple juice, from canned pineapple or fresh
11 - 1/4 cup soy sauce
12 - 2 tablespoons honey or brown sugar
13 - 1 tablespoon rice vinegar
14 - 1 teaspoon sriracha or red pepper flakes, optional for heat
15 - 1 teaspoon grated ginger
16 - 2 cloves garlic, minced
17 - 1 tablespoon cornstarch mixed with 2 tablespoons water

→ For the Rice

18 - 2 cups cooked jasmine rice or brown rice
19 - 1/2 cup coconut milk, optional for extra tropical flavor
20 - 1/2 teaspoon salt

→ For Garnish

21 - 1/4 cup chopped green onions
22 - 2 tablespoons toasted coconut flakes, optional
23 - 1 tablespoon sesame seeds
24 - Lime wedges

# Instructions:

01 - In a bowl, toss chicken pieces with soy sauce, salt, pepper, garlic powder, smoked paprika, and cornstarch. Let sit for 5-10 minutes. Heat olive oil in a large pan over medium-high heat. Add chicken and cook for 5-7 minutes, stirring occasionally, until golden brown and fully cooked. Remove and set aside.
02 - In the same pan, add a little more oil if needed. Stir in pineapple chunks, garlic, and ginger, and cook for 1-2 minutes until fragrant. Pour in pineapple juice, soy sauce, honey, rice vinegar, and sriracha (if using). Stir well. Simmer for 2-3 minutes, then add the cornstarch slurry to thicken the sauce.
03 - Return the cooked chicken to the pan, tossing it in the sauce. Simmer for 1-2 minutes until fully coated. Serve over warm jasmine rice (cooked with coconut milk for extra flavor). Garnish with green onions, sesame seeds, toasted coconut flakes, and a squeeze of lime.
