12 - 170 grams corn kernels (fresh, frozen, or canned)
13 - 30 grams chopped fresh cilantro

14 - 60 millilitres mayonnaise or Greek yogurt
15 - 60 millilitres sour cream
16 - 15 millilitres fresh lime juice
17 - 0.5 teaspoon chipotle powder

→ To Serve

18 - Extra lime wedges (optional)

# How to Prepare:

01 - In a medium bowl, combine olive oil, chipotle powder, smoked paprika, garlic powder, cumin, brown sugar, salt, and black pepper to form a marinade.
02 - Coat chicken breasts evenly with the marinade and let rest for a minimum of 15 minutes to enhance flavor.
03 - Preheat a grill pan or skillet over medium-high heat. Grill marinated chicken for 5–6 minutes per side until the internal temperature reaches 74°C. Let rest before slicing into strips.
04 - In a small bowl, whisk together mayonnaise or Greek yogurt, sour cream, lime juice, and chipotle powder until fully combined.
05 - If desired, gently heat black beans and corn in a saucepan over medium heat and season with a pinch of salt.
06 - To assemble, divide rice between serving bowls. Layer with sliced chicken, black beans, corn, and sprinkle generously with chopped cilantro.
07 - Drizzle the creamy chipotle sauce over the assembled bowls. Serve immediately with additional lime wedges as desired.

# Extra Tips:

01 - Marinating the chicken for at least 15 minutes intensifies the smoky, spicy flavors.
02 - Both mayonnaise and Greek yogurt yield a creamy sauce, but yogurt lowers the fat content.
