# How to Prepare:

01 - Heat a cast iron pan over medium heat and cook the breakfast sausage until well done. Transfer sausage to a plate and set aside. Reserve 60 ml of drippings in the pan.
02 - Stir flour into the reserved drippings over medium heat and whisk until golden. Gradually add milk, stirring consistently, until the mixture thickens to a smooth gravy. Season with salt and black pepper.
03 - Split English muffins and lightly toast them to just golden while preparing the gravy.
04 - In a clean skillet over low heat, whisk eggs with a dash of milk for extra fluffiness. Gently scramble until softly set.
