01 - 3 tablespoons unsalted butter
02 - 450 grams boneless, skinless chicken thighs
03 - Kosher salt, to taste
04 - Freshly ground black pepper, to taste
05 - 450 grams uncooked orzo
06 - 4 garlic cloves, minced
07 - 950 millilitres chicken stock
08 - 2 tablespoons unsalted butter, melted

09 - Chopped fresh parsley
10 - Parmesan cheese, grated

# How to Prepare:

01 - Pat chicken thighs dry with paper towel. Season thoroughly on both sides with kosher salt and black pepper.
02 - Melt 3 tablespoons unsalted butter in a large cast iron or ceramic skillet over medium heat. Add chicken and sear for 3 to 4 minutes per side until deeply golden. Transfer chicken to a plate.
03 - If needed, add a tablespoon of butter or olive oil to the skillet. Add orzo and stir until coated and beginning to toast lightly. Add minced garlic, stirring continuously until fragrant and orzo turns light golden.
04 - Pour chicken stock into the skillet. Nestle seared chicken thighs back into the orzo and stock mixture. Bring to a boil, then reduce heat to a gentle simmer and cover.
05 - Simmer for 15 to 20 minutes, checking after 12 minutes, until orzo has absorbed the liquid and chicken is cooked through with an internal temperature of 74°C.
06 - Drizzle melted butter over the top. Garnish generously with chopped parsley and grated parmesan cheese. Serve immediately.
