In a bowl, whisk eggs thoroughly until yolks and whites are fully combined.

Melt butter or heat oil in a non-stick pan over medium heat. Add sliced cherry tomatoes and cremini mushrooms. Sauté for several minutes until softened.

Stir in tomato sauce and dried oregano. Continue cooking for 1 minute until aromatic.

Reduce heat to medium-low. Pour whisked eggs evenly over the sautéed vegetables.

Allow eggs to set slightly at the bottom. Using a spatula, gently lift the edge and tilt the pan so uncooked egg flows underneath. Repeat until most of the eggs are set.

Sprinkle mozzarella cheese over the surface. Cover with a lid and cook for 1 to 2 minutes until the cheese is melted and eggs are just set.
