Preheat oven to 350 F (175 C). Line an 8x8-inch baking pan with parchment paper.

In a large bowl, stir together oats, flour, cinnamon, salt, baking powder, and sugar.

Stir in the oil, then very firmly press two-thirds of the dough into the prepared pan, reserving the remaining dough for topping.

In a separate bowl, combine diced strawberries, cornstarch, and sweetener. Mix until evenly coated.

Spread the strawberry mixture evenly over the pressed dough layer in the pan. Sprinkle the reserved dough over the top and press down very firmly.

Bake on the center rack for 35 minutes. Remove and let cool completely, then refrigerate for at least 1 hour before cutting.

Cut into bars and serve plain or topped with melted coconut butter, frosting, or a powdered sugar glaze.
