→ Dry Ingredients

01 - 1 cup quick or rolled oats
02 - 1/2 cup spelt, white, or oat flour
03 - 1/4 tsp cinnamon
04 - 1/4 tsp salt
05 - 1/4 tsp baking powder
06 - 1/3 cup sugar, unrefined if desired

→ Wet Ingredients

07 - 1/3 cup oil

→ Filling

08 - 2 cups diced strawberries
09 - 1 1/2 tsp cornstarch or arrowroot
10 - 1 tbsp sweetener of choice or pinch of uncut stevia

# How to Prepare:

01 - Preheat oven to 350 F (175 C). Line an 8x8-inch baking pan with parchment paper.
02 - In a large bowl, stir together oats, flour, cinnamon, salt, baking powder, and sugar.
03 - Stir in the oil, then very firmly press two-thirds of the dough into the prepared pan, reserving the remaining dough for topping.
04 - In a separate bowl, combine diced strawberries, cornstarch, and sweetener. Mix until evenly coated.
05 - Spread the strawberry mixture evenly over the pressed dough layer in the pan. Sprinkle the reserved dough over the top and press down very firmly.
06 - Bake on the center rack for 35 minutes. Remove and let cool completely, then refrigerate for at least 1 hour before cutting.
07 - Cut into bars and serve plain or topped with melted coconut butter, frosting, or a powdered sugar glaze.
