Slice the chicken breasts horizontally to create 4 even pieces. Mix paprika, salt, onion powder, garlic powder, oregano, black pepper, and cayenne pepper in a small bowl.

Line up three large shallow dishes. Place flour mixed with half of the seasoning in the first dish, beaten eggs in the second dish, and panko breadcrumbs mixed with the remaining seasoning in the third dish. Place a large tray at the end to hold the coated chicken.

Dredge each chicken piece in the flour, then dip into the egg, and finally coat thoroughly in the breadcrumbs. Place each coated piece on the tray.

Heat vegetable oil in a large pan over medium-high heat until a breadcrumb sizzles rapidly. Fry chicken pieces for 3-4 minutes on each side until golden and crispy, ensuring they are cooked through. If needed, fry in batches and replenish the oil between batches. Place the cooked chicken on a wire rack over a tray.

Sprinkle crumbled feta evenly over the fried chicken. Place under a high grill and cook until the feta turns golden and slightly crisp, while remaining soft underneath.

Drizzle the chicken with hot honey just before serving. Store leftover honey in the fridge if desired.
