Mediterranean Chicken Patties (Print Version)

01 - 3 tablespoons olive oil, divided
02 - 1 medium onion, diced
03 - 1 tablespoon garlic, minced
04 - 1 cup baby spinach, chopped
05 - 1 pound ground chicken
06 - 1/2 cup breadcrumbs (or gluten-free alternative)
07 - 1/4 cup Greek yogurt
08 - 2 tablespoons fresh dill, finely chopped
09 - 1 tablespoon fresh lemon juice (from half a lemon)
10 - 1 teaspoon dried oregano
11 - 1/2 teaspoon paprika
12 - 1/2 teaspoon ground cumin
13 - 1/2 teaspoon salt
14 - 1/4 teaspoon ground black pepper

# Instructions:

01 - Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sauté the onion and garlic for 2–3 minutes until softened and slightly golden. Add the spinach and cook for 1 minute until wilted. Set aside to cool for 5 minutes.
02 - In a mixing bowl, combine ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Add the cooled onion-spinach mixture and gently mix until combined.
03 - Form the mixture into 12 equal patties. Cover and refrigerate for at least 30 minutes to allow the patties to firm up.
04 - Heat the remaining 1 tablespoon olive oil in a skillet over medium-high heat. Cook the patties in batches for 3–5 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F).
05 - Serve warm with your favorite side dishes, such as rice pilaf, tzatziki sauce, or grilled vegetables.

# Notes:

01 - Store patties in an airtight container in the fridge for up to 3–4 days or freeze uncooked for up to 2 months.
02 - Reheat on a skillet, in an air fryer, or microwave for best results.
03 - For air fryer cooking, cook patties at 375°F for 13–15 minutes, flipping halfway through.
