Crispy phyllo wraps creamy feta, finished with chili honey for a sweet-spicy appetizer sure to impress.

# What You’ll Need to Make This:

→ Feta Rolls

01 - 200 g feta cheese, crumbled
02 - 4-6 sheets phyllo dough
03 - 2 tablespoons olive oil
04 - 1 teaspoon dried oregano
05 - Salt, to taste
06 - Black pepper, to taste

→ Chili Honey

07 - 60 ml honey
08 - 1-2 tablespoons chili flakes, adjusted to taste
09 - 1 tablespoon apple cider vinegar

# How to Prepare:

01 - Set oven to 190°C. Line a baking sheet with parchment paper to prevent sticking.
02 - In a mixing bowl, crumble feta cheese. Add dried oregano, salt, and black pepper. Mix thoroughly until uniform.
03 - Lay 1 sheet of phyllo on a clean surface. Use a pastry brush to lightly coat with olive oil. Top with second sheet, repeat brushing. Repeat process to stack desired number of layers.
04 - Spread feta mixture along a short edge of phyllo stack. Tightly roll into a log, sealing edges as you go. Place seam-side down on prepared baking sheet. Repeat with remaining phyllo and filling.
05 - Brush tops of rolls with remaining olive oil. Bake in preheated oven for 15-20 minutes, or until golden brown and crisp.
06 - While rolls bake, combine honey, chili flakes, and apple cider vinegar in a small saucepan. Warm over medium-low heat for 1-2 minutes, stirring to meld flavours.
07 - Remove baked rolls from oven. Generously drizzle with warm chili honey sauce. Serve immediately while crisp.

# Extra Tips:

01 - Do not overfill phyllo to prevent tearing of the dough during rolling.
02 - Work quickly with phyllo sheets, keeping unused portions covered with a damp towel to prevent drying.
03 - Adjust quantity of chili flakes in the honey to control desired spice level.
