Set oven to 190°C. Line a baking sheet with parchment paper to prevent sticking.

In a mixing bowl, crumble feta cheese. Add dried oregano, salt, and black pepper. Mix thoroughly until uniform.

Lay 1 sheet of phyllo on a clean surface. Use a pastry brush to lightly coat with olive oil. Top with second sheet, repeat brushing. Repeat process to stack desired number of layers.

Spread feta mixture along a short edge of phyllo stack. Tightly roll into a log, sealing edges as you go. Place seam-side down on prepared baking sheet. Repeat with remaining phyllo and filling.

Brush tops of rolls with remaining olive oil. Bake in preheated oven for 15-20 minutes, or until golden brown and crisp.

While rolls bake, combine honey, chili flakes, and apple cider vinegar in a small saucepan. Warm over medium-low heat for 1-2 minutes, stirring to meld flavours.

Remove baked rolls from oven. Generously drizzle with warm chili honey sauce. Serve immediately while crisp.
