Place the peeled and chopped peach into a blender with 120 ml water and blend until completely smooth.

Combine the blended peach puree and remaining water in a saucepan and bring to a boil over medium heat. Remove from heat and add the green tea bags. Allow the tea to steep for 3 to 5 minutes.

Pour the peach green tea through a fine mesh sieve into a pitcher to remove any solid peach flecks, if a smoother texture is desired.

Stir in honey to achieve the preferred level of sweetness. Refrigerate until thoroughly chilled.

Serve the chilled tea over ice in glasses. Garnish with fresh peach slices and sprigs of mint.
